National Taco Day - Healthy Recipes

Happy National Taco Day!

I have yet to meet someone who does not enjoy a good taco! If you grew up with tacos that were stuffed with ground beef, cheese, sour cream, tomato, salsa and a few tiny pieces of lettuce in a hard corn shell, you are not alone. But if you are still eating tacos this way and have not tasted any of the hundreds of taco variations out there, you are missing out! The beauty of tacos is that you can easily make any recipe your own by switching up the toppings and mix and matching the fillings. Tacos can also be extremely nutritious! Below is a roundup of 10 delicious and healthy taco recipes for you to try this National Taco Day, taco Tuesday, or on any day of the week! And if you still prefer to go with a traditional old school taco, I recommend switching it up and using Big Mountain Foods Cauli Crumble and/or black beans in place of (or mixed with) your ground beef for a healthier option!

 The Roundup!

1.     Sweet Potato and Black Bean Tacos with Avocado Pepita Dip - Sweet potato and black bean are a delicious combination and the avocado pepita sauce adds a delicious creaminess!

2.     Ultimate Green Taco Wraps with Lentil-Walnut Taco Meat - Don’t be fooled by the lettuce! They may be messy (what taco isn’t?) but the lentil walnut filling shines in this healthy taco!

3.     Tofu Tacos With Black Beans - These tofu and black bean tacos are packed with protein, fibre and flavour!

4.     Chipotle Portobello Mushroom Tacos - The Portobello mushrooms add a meatiness to these plant-based tacos, and the chipotle sauce is packed with flavour.

5.     Chicken Tacos With Pineapple Salsa - Anything with pineapple salsa is delicious, and these chicken tacos are no exception!

6.     Easy Fish Tacos - No taco round-up is complete without at least one fish taco recipe!

7.     Jamaican Jerk Jackfruit Tacos With Mango Avocado Salsa - If you haven’t had jackfruit before, this is the way to try it!

8.     Cauliflower Chickpea Tacos - These cauliflower chickpea tacos are packed with flavour and nutrients!

9.     Easy Soy Curl Tacos - If you can get your hands on soy curls, I highly recommend trying this simple taco recipe that tastes just like a chicken taco!

10.  Tempeh Tacos - Tempeh, which is high in protein, nutrients, and probiotics, shines in this delicious taco recipe.

Whether you try one of the recipes above, or a favorite of your own, I hope you enjoy National Taco Day with a taco in each hand. Remember, the only bad taco is the one you didn’t eat!
